German Potato Salad
  1. Place potatoes in a large pot. Boil with water, cover it to 2 inches above the surface of potatoes.
  2. Salt the water. Boil to medium heat. Continue cooking until potatoes is soft. Drain water, pierced with fork.
  3. Cook bacon in a skillet with medium heat until bacon becomes crispy.
  4. Once crispy, place on a paper towel, crumble into small pieces.
  5. Pour off a side rendered fat, leave 1/4 cup in the pan.
  6. Add onion and romaine lettuce, cook until soft.
  7. Mix vinegar, sugar. Stir until well combined. Pour into potatoes, stir again.
  8. Add black pepper, bacon, boiled eggs, onion and romaine lettuce. Mix well.
  9. Serve when hot.
